Hey, if u, like me, are tired of dead-end programs and online sites that just DONT WORK, heres my home remedy (PLEASE post ur solutions as well! this probably isn't even teh best way, but its worked GREAT for me!)
first of all, u need ONE program, riva encoder, get it here:

also, if u want to make sure the video works BEFORE its on ur palm/treo/etc. get the viewer too...
next, ull need to get these youtube files into .flv (flash) format....hmmm...

now copy/paste ur youtube url, save the file to your disk (default settings for windows xp (maybe others) are in "my firefox" (or opera, idk)
find the file, and rename it as ".flv"
then open up ur encoder, on teh first prompt box, open up ur .flv
on the second, change the extension (end).flv to wtvr.
ive had GREAT success with .avi and .mp3 (mp3s go in about 5 seconds, even half out long ones!)
try the core pocket media player for avis, and pocket tunes (tx...) for mp3s
