I've purchased Picsel Smartoffice and like it much better for handling Office documents.
Is there a way to make it the default app for those documents instead of Quickoffice? I assume that I could de-install Quickoffice, but I'm not sure if that would make Smartoffice the default application or not.

Why not open the HP App Catalog and look for yourself?
There is a "Search" box in the lower right corner of the app. Enter the text "smart office", and you'll find it right away.

There may be a way to do that with Preware. Though I am not totally sure.

Unless I'm missing it, there's still no paragraph indentation in this app either.
Also this office app is not friendly with the HP bluetooth keyboard. Tab has no functionality, and the arrows don't do a thing either.
Know how bad it is going to look typing out a letter or online resume without being able to intent, or format, let alone not having any cells or formatting?
For $10 it is not all that great for documents. No indents. Doesn't use a spell checker, or have a spell checker. So nice in that TestAssist won't be changing your words as you type, still bad that there's no spelling checker at all.
Arrow keys on the bluetooth keyboard won't do a thing, so there's no Control+ArrowKeys to skip whole words. You'll be wanting to zoom or get a stylus to type/edit with. Only function with the keyboard per the app is the very basic keyboard abilities. Tab has no use.
WritePad has more features for writing documents, yet shares the same keyboard handicap as Picsel SmartOffice. It can use the Ctrl+ArrowKeys but the cursor won't show the current position - it appears to be stationary (ignoring you) until you go to type. So the current cursor refresh is broken.
QuickOffice has way more features, is comfortable with the HP bluetooth keyboard, can change bold, italic, underline, text and highlight colors. It had three inherent font types, 8 to 72 point font sizing. QuickOffice also uses the Tab key to indent paragraphs!
Oh, and the ctrl+arrowkeys works and the cursor is refreshed to its current location. Also there is no noticeable dragging down of the HP TouchPad tablet like with Picsel SmartOffice.
Doesn't have strike-through font, and no spelling checker that I have found. Still far more advanced than the two listed above. No cell or other formatting (ie. adding footers & headers, page numbers, date, long date, long date with day, etc.).
Feature for feature, Quick Office is so far the more advanced office program on webOS.
None of the programs will inquire if you want to save the document you was typing, nor as a draft if you go to close the application. Would like to see a quick save feature, or just tapping "Forget About It!"
Still no 100% working office program out there. Picsel had visual appeals. WritePad has a college notebook feel with added features on the menu bars that I wished other apps used. So far, in my opinion, HP's QuickOffice is the best for functionality and features.
Perhaps the other program authors are reading up and will make their office programs better.

There is no way I know of. In the Device Info application, if you open the drop-down menu on the top left, you can tap Default Applications. But it does not allow you to change anything.
Speedtouch addressed it above...maybe there is a way via Preware (homebrewing your TouchPad). Have you looked into it there?
